I've seen very few quality Seth Thomas watches and I see no reference to "Olympia" in the watch guide. The only one that stands out in my mind is the Maiden Lane model.

These appear to be a private label, although for whom is not yet known. We have two other examples in our database, both identical to Ernest's movement, SNs 223,546 and 223,551. However, both of these examples have DS Arabic dials with "Olympia" on them. With all three examples in a narrow range of serial numbers (I think Ernest's watch is SN 223,533) I believe that the absolute maximum production is 255 and is probably far less, possibly as few as 20. SN 223,468 is a Grade 260, SN 223,723 is a 17 jewel. We have nothing else recorded in between. These are scarce, high grade movements and little is known about them.
