Does the weight of the dials for hous minutes and seconds mess with the time keeping ability?

The weight of the disks does not affect the time keeping ability in a good runner. In practice the real issue is the digital mechanism. On one I serviced the watch may run for hours "clicking over" each hour and then stop, on the hour, because on that one the movement couldn't always overcome the tension that the spring bar is putting on the gearing in the hour dial. Unfortunately, the hour dial is not designed to be serviced and the spring tension bar is not designed to be easily adjusted. So, you do what you can, I guess the answer to your question is perhaps yes, but not exactly because of the weight but because of the tension.
