Got this 16S IWC New York in a keystone case with a conversion dial anyone know what this is and what it may be worth? I have no clue...

An International Watch Co "Jones Calibre" Tom, that stylised letter you see on the plates determines its Pattern/Grade. Case and dial much later then the movement.
